A family micro-mill was established, enhancing quality and control at Los Tonos: mandarin acidity & dark chocolate.
Our selected lot was cultivated at Finca Los Tonos by Johnny Abarca and processed at his family’s micro-mill. The mill was founded in 2015, and has dramatically improved control and quality, recently earning a spot in the Cup of Excellence finals.
Costa Rica has become one of Central America's leading coffee producers, with this lot originating from Brunca, one of the country’s eight famous growing regions.
The cherries are carefully handpicked based on ripeness, then delivered to the micro-mill. They are dried on raised beds, regularly raked to ensure uniform drying. This process lasts 10-20 days, after which the cherries rest for two months before dry milling.
