Grown with care in the fertile volcanic soils of a remote mountain valley town: blood orange & a rich, syrupy texture.
Nestled in a small valley, Gaitania lies 331 kilometres from Bogotá in southern Tolima, with elevations ranging from 1400 masl in the town centre to mountain peaks of 5300 masl.
The farm’s soil, enriched by nutrients from past eruptions of Tolima, boasts high levels of potassium and nitrogen, creating ideal conditions for coffee cultivation.
At the roastery, we have been impressed by this lots profile, revealing blood orange, passionfruit and a rich, syrupy texture.
This natural processed coffee is a collaboration between Azahar Coffee Company and partner farmers in Gaitania.
Many of these farmers carry on a family legacy of coffee cultivation, growing Colombia, Castillo, and Caturra varieties at altitudes ranging from 1,700 to 2,000 meters above sea level.
In this meticulous natural process, the coffee cherries are first fermented for 38 hours, then carefully dried for eight days on raised African beds under a protective canopy.
